• 2 each red or white onions, sliced thinly

• 3 tablespoons black peppercorns

• 1tablespoon allspice berries

• 1tablespoon dill, dried

• 3 tablespoons sugar

• ½ cup white vinegar

• ½teaspoon sea salt

• ½teaspoon ground coriander

• ½ teaspoon ground pepper


• Combine ingredients in a non-reactive bowl or jar. Toss to combine, cover tightly and refrigerate 24-48 hours before using; stir twice during cure process. Alternative vegetable: use carrots instead of onions or add with onions. (Be sure to blanch carrots first, cooling completely and then following remaining steps.)

• For quicker cure, bring vinegar, sugar, salt and spices to boil. Pour over prepared onion rings or other vegetables. Cool. Serve.
