LONG BEACH, Wash. - Sondra Eaton, proprietress of the Peninsula Golf Course's Cove Café, and Gini Chin of Ilwaco's former Raven & Finch wine bar have joined forces to launch "The Cove @ Night," a weekend wine bar located in the new Peninsula Golf Course clubhouse in Long Beach.
Each Friday and Saturday evening, the Cove Café will put on "a splash of night makeup" and transform into The Cove @ Night, said Eaton.
It will offer a selection of wines, light cuisine and live music in a casual setting overlooking the golf course.
"Since we opened our new clubhouse, we have just been serving lunch," said Eaton. "This facility is so beautiful that I thought it would be great to expand on our lunches and open for the weekend.
"There isn't a lot to do at night here on the peninsula, so I thought that a wine bar serving fantastic wines, appetizers and a bit of music would be a great way to diversify our income during the winter months when our golf course is not busy."
Eaton searched out Gini Chin to help create a cozy, romantic atmosphere to the facility.
"We're very excited about the wine bar," she said. "It's going to be great place for friends to get together and enjoy their evenings out. Good wine, good food and good times!"
As for the selection of wines, Chin says, "We have a wide range of organic and biodynamic wines from around the world and the Pacific Northwest, unique wines you won't find on the Peninsula but are easy, affordable and fun."
The Cove @ Night also will offer a menu of small plates with everything from Eaton's lasagna to a selection of imported salamis, cheeses and olives.
The Cove @ Night is open Fridays and Saturdays from 5 p.m. to 10 p.m. It's at 9604 Pacific Hwy. in Long Beach.
Opening night festivities on Saturday, Feb. 4 include live music by singer-songwriter Jill Trenholm and accordionist Mike Danner. Doors open at 5 p.m. and music begins at 8 p.m.
