You can't eat at a restaurant on one occasion and base your critique. You can't let your personal preferences for recipes or ingredients allow you to judge a chef's cooking. You can't - or shouldn't - be allowed to publicly print that a certain meal should not be tried until you have personally tried every item on that menu.
But, fellow restaurateurs, take heart, because you should be able to see from the articles that this person is not playing with a full deck of recipe cards. Never use cheese with seafood?
